I've tried a lot of different things in the past. I'm just lazy lately.

cooking for one is definitely less fun than cooking for/with others, but it can have it's own joys as well

That and I want to make a sourdough starter. Everything I've read lately says that the pickle jar I really wanted to use is probably too big.

Not sure how large your pickles jar is but we've always kept our starter in a pint sized canning jar (~450 g) which has worked just fine
